Momma's Bean Soup

Hello! How have things been for you all? I hope bearable. Maybe more than that, hopeful. Here is the recipie I have promised. It is so good ya'll! I grew up eating ham and beans, so this brings the nostalgia in a big way.

Momma's Bean Soup

Ingredients:
2 cups chopped red onions
2 cups shredded carrots
1 1/2 cups celery
1 1/2 TBS crushed/ minced garlic 
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 1/2 tsp coconut sugar
2 tsp liquid smoke
a few dashes of hot sauce
1 tsp salt (plus more to taste after done cooking)
1/4 tsp pepper
2 TBS Soy Sauce
4 cups veg/mushroom broth
2 cups water
5 cans white beans with juices
1/2 cube non-chicken seasoning 
olive oil for saute

Instructions:
Prep all veg.
Heat oil in the bottom of a deep pot. (aprox 2 TBS)
When hot, saute over med heat, onion, celery, and carrot for 6min stirring often.
Add in seasonings. salt, pepper, onion and garlic powder, and smoked paprika. 
Saute with spices another 5 min. stirring often. 
Make a small clearing and add a tsp of oil and cook the fresh garlic till tinder and aromatic then mix in.
Add coconut sugar, soy sauce, hot sauce, and liquid smoke. 
Saute another 3 min. 
Add broth, water and beans with juices. 
Stir and cover, bring to med-high till boiling. Stir every 10 min till boiling. 
Once at a boil off-set a lid covered by a towel and lower heat to simmer.
Simmer for 2 hours, stirring every 20 min. 

This amount feeds my family of 6 two times. (plenty of left overs for us to eat it for another meal)
I usually make some simple garlic cheese drop biscuits, or sometimes a skillet corn bread. 

Enjoy and rememeber it is so worth the effort!! The times of sauteing, and the flavor building is for real!
